It is primarily derived from sugarcane and sugar beet, with approximately 74.4% of the global sugar supply coming from sugarcane. This form of sugar is widely used in industrial applications, either as raw sugar or processed into products like glucose syrup.
Sugarcane cultivation thrives in tropical climates and is predominantly found in countries such as Brazil, India, Indonesia, and Mexico, which are among the largest producers. In contrast, regions with cooler climates, like Turkey, rely on sugar beet cultivation due to the suitability of local growing conditions. Unlike sugarcane, which contains 12-16% sugar, sugar beets are known for their efficiency in sugar extraction and play a critical role in meeting domestic sugar needs in these regions.
Beyond its role as a sweetener, sugar is a versatile ingredient in industrial processes. It is used as a preservative in jams and jellies, a texture enhancer in baked goods, and a fermentation agent in alcoholic beverages. Additionally, sugar is a key raw material in producing ethanol, bioenergy, and bioplastics, highlighting its importance beyond culinary uses.

Corn
Corn, a member of the grain family, is primarily cultivated as animal feed. Additionally, it serves as a key ingredient in the production of flour, corn flakes, and corn syrup. Corn thrives in hot, sunny climates with high humidity and grows best during the warmest days of the year. Believed to have originated in the Americas, corn was introduced to Turkey in the 1600s, arriving via Egypt under the name “Egyptian Wheat.” Over time, its name evolved to “corn.” In Turkey, it is predominantly grown in the Eastern Black Sea region and can reach heights of up to 4 meters.
Global corn production stands at approximately 1.1 billion tons annually. The United States and China together produce more than half of the world’s supply, with Brazil contributing around 80 million tons. EU countries follow closely with 65 million tons, trailed by Ukraine (30 million tons), Argentina (25 million tons), India (24 million tons), Mexico (22 million tons), South Africa and Canada (14 million tons each), and Russia (11 million tons). Turkey ranks 24th globally in corn production. The United States is also the largest exporter of corn.
In terms of consumption, the USA leads with 302 million tons, followed by China (216 million tons), Brazil (55 million tons), Mexico (31 million tons), India (19 million tons), Japan (15 million tons), Egypt (13 million tons), and Canada (12 million tons).
In Turkey, approximately 6 million tons of corn are produced annually, while 2.5 million tons are imported to meet demand. Key production regions include Konya (19%), Adana (15%), Mardin (8%), Osmaniye (6%), Karaman (5%), Sakarya (5%), Manisa (5%), Şanlıurfa (4%), Diyarbakır (4%), and Kahramanmaraş (4%), collectively accounting for 75% of domestic production.
